Welcome Deviation Distilling
In September, Dairy Block welcomed its newest tenant to our community: Deviation Distilling. Owned and operated by husband and wife duo, Cynthia and Bob Wiley, along with Bob’s childhood friend and Head Distiller, Dave Gade, this distillery now occupies a beautifully renovated space facing the Dairy Block Alley. From the beginning, their team has focused on the definition of craft, taking no shortcuts in the production of their distinct gin and whiskey expressions. In fact, they claim they make their spirits “the hard way”, distilling seasonal botanicals separately from the gin spirit base, hand-blending, hand-bottling, and even hand-numbering each batch.
Head Distiller, Dave Gade, has a background in culinary arts, making each gin expression a true chef-curated blend of flavors. We recommend trying their bright and aromatic Blood Orange Gin, distilled with fresh basil, black pepper, and juniper, or their Spice Trade Gin, which is aged in a rye whiskey barrel for 6-8 months and is only available at their Dairy Block tasting room.
Stop in for a round of cocktails and an assortment of lighter fare for snacking. Their menu features a seasonally rotating list of cocktails, charcuterie boards, burrata toast, and house-made pastries from their own Pastry Chef.
